Bacon and Egg Breakfast Sandwich
Recipe makes 2 hearty sandwiches
Whatcha Need
- 4 slices bacon
- 4 large eggs
- 2 sandwich rolls, biscuits, or slices of bread
- 2 slices American or cheddar cheese (optional)
- Unsalted butter for buttering the bread
Whatcha Do
- Cook bacon in a skillet over medium heat until crisp. Remove and set aside.
- Lightly butter the bread or rolls and toast until golden.
- In the same skillet, crack in the eggs and cook to your preference. For sandwiches, over-medium or lightly scrambled works best.
If using cheese, place it over the eggs during the last minute of 4. cooking to melt. - Assemble sandwiches with bacon, eggs, and toasted bread.
Serve hot.
Notes
A soft roll or biscuit will give you a more traditional diner-style sandwich.
Wrapping the sandwich in parchment for a minute or two helps everything settle together.
