Kanuchi (Cherokee Hickory Nut Soup)
Kanuchi is a traditional Cherokee preparation made from hickory nuts that have been cracked, pounded, and worked into a rich paste. Traditionally formed into balls that could be stored until needed, the nut paste is simmered in water to produce a rich, creamy soup. Modern Cherokee versions are sometimes sweetened and served with rice, and pecans may be substituted when hickory nuts are unavailable. This version uses a food processor or high-speed blender to accomplish what was traditionally done by hand with considerably more time and effort.
Recipe makes 4 servings (with enough prepared nut paste for two additional batches)
Whatcha Need
- 12 ounces raw shelled hickory nuts
- 1 quart water
- 1 teaspoon salt
- 1 tablespoon pure maple syrup, or to taste
- 1 cup precooked rice

In a high-speed blender or food processor, process the nuts, scraping down the sides as needed, until finely ground and beginning to release their oils, forming a coarse, thick paste.

Divide the paste into 3 equal portions forming each into a ball ( It takes only one portion of the nut paste for this recipe; freeze the remaining two for another time.). Wrap the two remaining balls in plastic and then aluminum foil and freeze for up to 3 months. If the paste is too loose to hole together, place the two portion in small zip-lock bags, press out the air, seal, and freeze.

Place water and salt in a 3-quart saucepan. Set over high heat, add the remaining nut-paste ball, and bring mixture to a boil, whisking to fully combine the nut paste and salted water. Reduce heat to a simmer and cook uncovered for about 30 minutes, or until the mixture is reduced by half.

Add maple syrup to taste. Increase heat and bring the soup briefly back to a boil, whisking vigorously to reincorporate any hickory oil that has separated and risen to the surface. Taste and correct salt level if necessary.

To serve, laden hot soup into 4 bowls and add ¼ cup rice to bowl.
Note
Pecans can be substituted for hickory nuts if unavailable.
