Bacon and Egg Breakfast Sandwich

Recipe makes 2 hearty sandwiches

Whatcha Need

  • 4 slices bacon
  • 4 large eggs
  • 2 sandwich rolls, biscuits, or slices of bread
  • 2 slices American or cheddar cheese (optional)
  • Unsalted butter for buttering the bread

Whatcha Do

  1. Cook bacon in a skillet over medium heat until crisp. Remove and set aside.
  2. Lightly butter the bread or rolls and toast until golden.
  3. In the same skillet, crack in the eggs and cook to your preference. For sandwiches, over-medium or lightly scrambled works best.
    If using cheese, place it over the eggs during the last minute of 4. cooking to melt.
  4. Assemble sandwiches with bacon, eggs, and toasted bread.
    Serve hot.

Notes

A soft roll or biscuit will give you a more traditional diner-style sandwich.

Wrapping the sandwich in parchment for a minute or two helps everything settle together.
