Succotash
The earliest succotash was considerably simpler than the version we know today, built primarily around corn and beans. Over generations, cooks added ingredients according to region, season, and taste. This modern version includes tomatoes, onion, bell pepper, and garlic while retaining the corn-and-bean foundation of its Indigenous predecessor.
Recipe makes about 6 servings
Whatcha Need
- 1 tablespoon sunflower or olive oil, optional
- ½ cup diced onion
- ½ cup red bell pepper, chopped
- 3 garlic cloves, minced
- ½ cup diced tomatoes
- 2 cups cooked lima beans
- 2 cups fresh or frozen corn kernels
- ½ cup chicken broth
- Salt and pepper to taste
Whatcha Do
- Add oil to a large saucepan set over medium heat. Sauté onions until transparent.
- Add red bell pepper and minced garlic and cook for 3 minutes more.
- Add tomatoes, corn, and lima beans and stir to combine.
- Add chicken broth and cook for 5 minutes more.
- Season to taste and serve hot.
