Granny’s Green Jell-O Salad

Lime Jell-o cottage cheese

My granny used to prepare this easy-to-make salad every time I visited because she knew it was one of my absolute favorite of her dishes. It was also her go-to-dish for church dinners, Thanksgiving, Christmas, and other special occassions. I hope you enjoy it, too.

Recipe Makes 6-8 Servings

Whatcha Need:

  • 3 ounce package lime-flavored Jell-O
  • 1 can crushed pineapple (15.25 ounce can)
  • 1 cup of Cool Whip
  • 1/2 cup small curd cottage cheese
  • 1/2 cup chopped pecans

Whatcha Do:

  1. Drain pineapple well, saving the juice.

  2. Mix Jell-O according to directions on the box. Use the pineapple juice as the liquid, adding enough water (if needed) to make up amount of cold liquid stated on the box.

  3. Refrigerate for about 1 hour, or until half-set.

  4. Remove from refrigerator and add in the Cool Whip, cottage cheese, chopped nuts, and crushed pineapple. Mix until very well incorporated. Chill for at least two hours before serving.
