Liverwurst Meatballs
Makes 6 to 8 servings
Whatcha Need
- 1 pound ground pork
- 1 pound liverwurst, finely chopped
- 1 cup grated Parmesan cheese
- 2 large eggs
- 1 small onion, finely chopped
- 1½ Tablespoons flat leaf parsley, finely chopped
- 2 cups panko breadcrumbs
- 1½ cups lukewarm water
- Salt and black pepper to taste
- 1 cup vegetable oil for frying
Whatcha Do
- In a large bowl, combine the ground pork and finely chopped liverwurst. Mix in the cheese, eggs, onion, parsley, salt, and pepper.
- Add breadcrumbs and slowly mix in the water, 1/2 cup at a time, until mixture is moist but still holds its shape. Form into meatballs.
- Heat the vegetable oil in a large skillet. Add meatballs in batches and cook until browned on all sides, slightly crisp, and cooked through, about 10 o 15 minutes. Drain on paper towels.
- Enjoy any way you choose.
Serving Ideas
- Toss with marinara sauce ad serve over spaghetti or linguine.
- Serve on toasted hoagie rolls with melted provolone for a rich, hearty sandwich.
- Pair with sautéed greens or roasted vegetables for a lighter option.
