Presidential Prune Whip
Recipe makes 4 servings
Whatcha Need
- 1 generous cup dried prunes
- 2 teaspoons fresh lemon juice
- ½ envelope unflavored gelatin
- ¼ cup water
- 4 egg whites, room temperature
- ⅔ cup granulated sugar
- 1 teaspoon vanilla extract
- Cream (optional)
Whatcha Do
- Cook the dried prunes according to directions on package.
- Pit and strain the prunes, then run them through a blender while still hot with the lemon juice and the gelatin dissolved in the water and melted over hot water.
- When the mixture is smooth, remove it from the blender. Add the egg whites, beaten stiff with the sugar and vanilla, and fold gently to combine.
- Spoon the mixture into a mold or bowl and chill until set.
- Serve unmolded or directly from the bowl.
Optional:
Pour cream over the top. It is also good decorated with whipped cream.
