Presidential Prune Whip

Recipe makes 4 servings

Whatcha Need

  • 1 generous cup dried prunes
  • 2 teaspoons fresh lemon juice
  • ½ envelope unflavored gelatin
  • ¼ cup water
  • 4 egg whites, room temperature
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • Cream (optional)

Whatcha Do

  1. Cook the dried prunes according to directions on package.
  2. Pit and strain the prunes, then run them through a blender while still hot with the lemon juice and the gelatin dissolved in the water and melted over hot water.
  3. When the mixture is smooth, remove it from the blender. Add the egg whites, beaten stiff with the sugar and vanilla, and fold gently to combine.
  4. Spoon the mixture into a mold or bowl and chill until set.
  5. Serve unmolded or directly from the bowl.

Optional:

Pour cream over the top. It is also good decorated with whipped cream.
