Country Style Collard Greens
Recipe makes 6 servings
Whatcha Need
- 2 quarts water
- 1 quart chicken broth
- 1 smoked ham hock or turkey leg
- 2 Tablespoons salt
- ½ onion, diced
- 2 cloves garlic, minced
- 2 pounds fresh collard greens, washed and stemmed
- 1 teaspoon crushed red pepper flakes
- ½ teaspoon smoked paprika
- 1 Tablespoon white vinegar
Whatcha Do
-
In a large pot set over a high heat, combine the water, chicken broth, ham hock, salt, onion, and garlic. Bring to a boil, then reduce heat to medium-low and let simmer for 45 minutes to 1 hour.
-
Meanwhile, prep your collards by cutting the leaves into two-inch pieces and soaking them in clean cold water and vinegar.
-
Add the greens to the pot and gently stir. Once the greens begin to wilt, add the red pepper flakes and smoked paprika.
-
Return mixture to a boil over high heat, then cover, reduce heat to medium-low, and simmer for about 1 hour, or until both the meat and collards are tender.
-
Remove meat from the bone, cut it into small pieces, and return to the pot. Adjust seasoning if necessary. Stir and serve.
