Country Style Collard Greens

Recipe makes 6 servings

Whatcha Need

  • 2 quarts water
  • 1 quart chicken broth
  • 1 smoked ham hock or turkey leg
  • 2 Tablespoons salt
  • ½ onion, diced
  • 2 cloves garlic, minced
  • 2 pounds fresh collard greens, washed and stemmed
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon smoked paprika
  • 1 Tablespoon white vinegar

Whatcha Do

  1. In a large pot set over a high heat, combine the water, chicken broth, ham hock, salt, onion, and garlic. Bring to a boil, then reduce heat to medium-low and let simmer for 45 minutes to 1 hour.

  2. Meanwhile, prep your collards by cutting the leaves into two-inch pieces and soaking them in clean cold water and vinegar.

  3. Add the greens to the pot and gently stir. Once the greens begin to wilt, add the red pepper flakes and smoked paprika.

  4. Return mixture to a boil over high heat, then cover, reduce heat to medium-low, and simmer for about 1 hour, or until both the meat and collards are tender.

  5. Remove meat from the bone, cut it into small pieces, and return to the pot. Adjust seasoning if necessary. Stir and serve.
