Liverwurst Meatballs

Makes 6 to 8 servings

Whatcha Need

  • 1 pound ground pork
  • 1 pound liverwurst, finely chopped
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1 small onion, finely chopped
  • 1½ Tablespoons flat leaf parsley, finely chopped
  • 2 cups panko breadcrumbs
  • 1½ cups lukewarm water
  • Salt and black pepper to taste
  • 1 cup vegetable oil for frying

Whatcha Do

  1. In a large bowl, combine the ground pork and finely chopped liverwurst. Mix in the cheese, eggs, onion, parsley, salt, and pepper.
  2. Add breadcrumbs and slowly mix in the water, 1/2 cup at a time, until mixture is moist but still holds its shape. Form into meatballs.
  3. Heat the vegetable oil in a large skillet. Add meatballs in batches and cook until browned on all sides, slightly crisp, and cooked through, about 10 o 15 minutes. Drain on paper towels.
  4. Enjoy any way you choose.

Serving Ideas

  • Toss with marinara sauce ad serve over spaghetti or linguine.
  • Serve on toasted hoagie rolls with melted provolone for a rich, hearty sandwich.
  • Pair with sautéed greens or roasted vegetables for a lighter option.
