Ellerbee’s Chocolate Fudge Pie

Chocolate Fudge Desperation Pie

Adapted from a 1950s recipe by newswoman Linda Ellerbee. It produces a very moist, fudgy pie that every chocolate lover is bound to enjoy.

Whatcha Need:

  • 2 ounces of a high-quality bittersweet chocolate (like Baker's Premium, Ghirardelli Intense, or Guittard Gourmet)
  • 1 stick (1/2 cup) unsalted butter or margarine
  • 1-1/4 cup granulated sugar
  • 1/4 cup flour
  • 2 large eggs
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 frozen 9-inch pie shell, thawed, unbaked

Whatcha Do:

  1. Preheat oven to 350ºF.

  2. Place chocolate and butter in a 4-cup microwave-safe bowl. Heat on high for 1 minute, stir, and heat 30 seconds longer. Let sit for a minute or so and stir until chocolate is completely dissolved.

  3. Add sugar, flour, vanilla, and salt. Stir until well combined. Pour mixture into the unbaked pie shell.

  4. Bake for about 25 to 30 minutes or until no longer jiggly in the middle. Pie serves 6 -8 people.
