Fritos Fruit Cake
This recipe is said to have been the first official recipe developed by Mother Doolin and later refined and by Miss Morris in the Fritos consumer service department. This version is just as it was published on the back of a 29-cent bag of chips in 1932.
Recipe Makes 2 Loafs
Whatcha Need:
2 cups sifted flour
1/2 tsp allspice
3/4 tsp cinnamon
1/4 tsp salt
1 cup sugar
1/2 cup butter
1/4 tsp soda
3 eggs
1 cup pecans
3/4 cup molasses
1 cup blanched almonds
2 cup crushed Fritos
2 cup candied fruit (lemon and orange peel, pineapple, cherries, and citrus)
Whatcha Do:
First, sift flour. Add spices and soda. Cream butter and sugar until fluffy. Add eggs and flour, molasses, fruit, nuts and Fritos. Pour into a well-greased pan lined with wax paper. Bake @ 275-degrees for 1 1/2 hours. Makes two loaf pans.
