Fritos Texas Loaf

This vintage recipe is for one the best meatloaves you'll ever taste, and just one of many recipes developed by Daisy Dean Doolin, mother of C.E. and Earle Doolin, co-founders of the original Frito Company.
Recipe Makes Enough for 2-3 Servings
Whatcha Need:
- 1 pound ground beef [the author uses lean, ground grass-fed beef]
- 1 egg
- 1 large onion, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon chili powder
- 1-1/2 cups crushed Fritos corn chips
- 1 cup canned tomatoes [about one-half of a 16-oz. can]
Whatcha Do:
Mix the beef, egg, onions, seasonings, and corn chips together. Form into a loaf, and place in an oiled [loaf] pan. Pour the tomatoes over the loaf, and bake, uncovered, at 300° for 1 hour.
