This popular Mexican hot beverage, thickened with masa and flavored with cinnamon and brown sugar, make a soothing after dinner beverage.
This recipe makes 4 to 5 servings
1/2 cup masa (corn flour)
5 cups whole milk
1 tablespoon ground cinnamon
5 tablespoons brown sugar
seeds of 1 vanilla bean
- Place the masa, milk, cinnamon and brown sugar in a blender. Blend until smooth, about 3 minutes.
- Pour the contents of the blender into a sauce pan. Add villa bean seeds and bring the mixture to boil over medium heat, stirring constantly. When the mixture reaches a boil, turn the heat to low and continue to whisk for 2-3 minutes longer.
- Strain atole through mesh sieve into mugs and serve hot.
