Buttermilk Pie Crust
Recipe makes dough for two nine-inch crusts
Whatcha Need:
- 2 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, chilled and diced 1/2 cup chilled lard (or margarine)
- 1/2 cup buttermilk
Whatcha Do:
-
Combine flour, sugar, and salt in food processor bowl. Add butter and lard. Pulse mixture to cut fat into dry ingredients until mixture resembles coarse pea-size meal.
-
Add buttermilk and stir and process just until moist clumps form. Turn out onto lightly floured surface and knead mixture together to form dough. Divide dough in half; flatten each into disks. Wrap each separate and chill for at least 30 minutes. (At this point dough can be refrigerated for a week or frozen for up to a month).
-
Let dough stand at room temperature to slightly soften before using.
