Buttermilk Pie Crust

Recipe makes dough for two nine-inch crusts

Whatcha Need:

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, chilled and diced 1/2 cup chilled lard (or margarine)
  • 1/2 cup buttermilk

Whatcha Do:

  1. Combine flour, sugar, and salt in food processor bowl. Add butter and lard. Pulse mixture to cut fat into dry ingredients until mixture resembles coarse pea-size meal.

  2. Add buttermilk and stir and process just until moist clumps form. Turn out onto lightly floured surface and knead mixture together to form dough. Divide dough in half; flatten each into disks. Wrap each separate and chill for at least 30 minutes. (At this point dough can be refrigerated for a week or frozen for up to a month).

  3. Let dough stand at room temperature to slightly soften before using.
