Mexican Atole
This popular Mexican hot beverage, thickened with masa and flavored with cinnamon and brown sugar, make a soothing after dinner beverage.
This recipe makes 4 to 5 servings
Whatcha Need:
- 1/2 cup masa (corn flour)
- 5 cups whole milk
- 1 Tablespoon ground cinnamon
- 5 Tablespoons brown sugar
- seeds of 1 vanilla bean
Whatcha Do:

Place the masa, milk, cinnamon and brown sugar in a blender. Blend until smooth, about 3 minutes.

Pour the contents of the blender into a sauce pan. Add villa bean seeds and bring the mixture to boil over medium heat, stirring constantly. When the mixture reaches a boil, turn the heat to low and continue to whisk for 2-3 minutes longer.

Strain atole through mesh sieve into mugs and serve hot.
