This vintage recipe is for one the best meatloaves you’ll ever taste, and just one of many recipes developed by Daisy Dean Doolin, mother of C.E. and Earle Doolin, co-founders of the original Frito Company.
Recipe Makes Enough for 2-3 Servings
Whatcha Need:
1 pound ground beef [the author uses lean, ground grass-fed beef]
1 egg
1 large onion, minced
½ teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon chili powder
1 ½ cups crushed Fritos corn chips
1 cup canned tomatoes [about one-half of a 16-oz. can]
Whatcha Do:
Mix the beef, egg, onions, seasonings, and corn chips together. Form into a loaf, and place in an oiled [loaf] pan. Pour the tomatoes over the loaf, and bake, uncovered, at 300° for 1 hour.
